Chef-Owner, Hiroshi Egashira, began his culinary apprenticeship at "Kawashou," one of the famous Japanese restaurants in Fukuoka, Japan, in 1981.
With 7 years of experience as a master of Sushi at "Kamon on Lake Union" in Seattle after arriving in the US in 1990, Hiroshi became one of the most inspiring Japanese chefs in Seattle.
In the end of 1996, Hiroshi started Hiroshi’s Catering Service to provide services as a private cater. Hiroshi then opened Hiroshi’s Restaurant & Catering Services in Eastlake area in 2002. During several successful years, he had opportunities to provide catering services to Boeing and ANA at 787 Premier and First Delivery to All Nippon Airways, Japan Airlines, TBS (a major TV station in Japan) filming of a movie titled “99 Years of Love/Japanese-American,” Washington-State and Hyogo Prefecture's 50th Anniversary of Sister State Party in 2013. At Hiroshi's, JAZZ & SUSHI Friday was a big hit for 7 years.
In 2010, Hiroshi expanded his business to make packaged Sushi and started serving Uwajimaya, the largest Asian market in the Seattle metropolitan area. Hiroshi sells about 400 to 500 packages of Sushi daily.
In 2011, Hiroshi started serving Sushi at Seattle’s landmark, Safeco Field, during Seattle Mariners' season. He covers the entire Safeco Field, including Stand, Club, Suite & “Hit it Here” Café.
Hiroshi's has been supporting the local communities through participating in events including “SUSHI & SAKE” Fest by Densho, “Jazz Picnic” in Magnuson Park by Pony Boys Record, and “Japanese Queen Scholarship Organization of Washington”.
In fall of 2013, Hiroshi’s Restaurant moved out of Eastlake area at the end of his lease of the space and opened a take-out store in a new location in Beacon Hill.
Hiroshi loves his life in Seattle where he can enjoy his favorite outdoor activities including fishing, camping, mushroom hunting and golfing as well as playing his train models for indoor activity. He is a big Seahawks & Mariners fan since 1990. He also likes to travel and has visited over 35 countries as a backpacker in younger age.
